Beverly Engle Peterson, 71, of Pittsburg, KS, passed away on March 2, 2025, at Mercy Hospital in Joplin, Missouri. She was born on June 22, 1953, to Joseph H. Engle and Margaret Plagens Engle in Pittsburg, KS. Beverly attended Pittsburg Schools and graduated from Pittsburg High School in 1971. She attended Pittsburg State University with an interest in nursing. She married David Lloyd Peterson on June 19, 1992. He preceded her in death on March 11, 2021. Beverly owned and operated a daycare "Alphabet Soup" for 30 years and a catering business "The Cooking Company."
She is survived by a daughter Jennifer Wilbourn Huff (husband Dr. C.J. Huff) of Springfield, MO; son David Longan (wife Haley Longan) of Frontenac, KS; five grandchildren: Savannah Huff, Keaton Huff, Julianne Huff, Brenlee Longan, and Brody Longan; mother Margaret Plagens Engle of Pittsburg, KS; sister Barbara Todd (husband Loren Todd) of Pittsburg, KS; and her beloved dog "Pete."
She was preceded in death by her father, her husband, brother Joseph H. Engle, Jr. "Joey", and her grandparents Herbert and Wilma Plagens, and Allen and Addie Engle.
The family will receive friends from 5:30 to 7 p.m. on Friday, March 7, 2025, at Brenner Mortuary. Graveside funeral services will be at the Highland Park Cemetery at 10 am on Saturday, March 8, 2025, with Rev. Mark Chambers officiating.
